Man does not live by bread alone.
But I could live on bread cheese alone. Well, I would add some brussel sprouts for fiber and vitamins.
And wine for antioxidants.
Brun-Uusto (bread) cheese can and should be heated, resulting in a delightfully browned crust and warm but not melty cheese center. I used a skillet on the stovetop, but apparently you can grillit too. I have only been able to find this cheese at one particular HEB so this time I stocked up.
For the brussel sprouts:
a quantity of smallish brussel sprouts halved lengthwise
sherry wine vinegar
Heat a large skillet over med heat. Add enough olive oil to lightly coat. Place sprouts cut-side down in pan and cover, cook til almost tender. Then increase heat slightly and brown, tossing to prevent burning and to lightly brown the round side. Salt and pepper, add a splash of vinegar.
They should not be mushy. Overcooking is why most people do not remember brussel sprouts fondly.
Sophie loved these. She took the leftovers for lunch--surely the only middle schooler with brussel sprouts in her brown bag.
