Trying new recipes has been inspiring, but sometimes you want something you can make off the top of your head. Even with a sunburn and after a glass of wine or two. Like Old Bay Seasoning on any sort of seafood and my caesar salad. The dressing recipe has taken up permanent residence in my head. It has a raw egg in it but no anchovies--Make sure you have bread to mop up any extra, and only use freshly grated parmesan or it won't be the same. Croutons are optional, unless you are Sophie, then they are the only reason to eat caesar salad. Oh, and you will need a blender....
Ginny's Caesar Dressing
Put in blender:
juice of one lemon
1 tsp. kosher salt
freshly ground pepper
2 Tbs. dijon mustard (country style)
2 cloves garlic
1 egg --if you are worried about salmonella use organic or just grow a pair
Blend till well combined, with blender running add good quality oil (I use grapeseed) until desired consistency---basically like runny mayo. Then add ~2-4 Tbs. balsamic vinegar and blend thoroughly.
Toss with romaine, parmesan and croutons, or just croutons if you are Sophie.
