Sophie won a cookbook when we went to Camp Flaming Arrow. Despite the fact she has lived ~25% of her life in Texas, she didn't know what King Ranch Chicken was. She was attracted by the recipe (except for the cream of mushroom soup), and thought she might like to serve it at her birthday party. Because I am a food snob I wondered if there may be a way to create a canned soup-free version. Google led me to the Homesick Texan's website where I found this delightful recipe, modified slightly because I used prepared chicken and substituted chipotle chile powder for the ancho.
Sophie didn't even pick out the tomatos. It was pronounced birthday party-worthy.
