Stuffed Bell Peppers

A Ginny original.....

1 lb ground italian sausage

1 cup rice (I used a rice/lentil pilaf that I got at Central Market), cooked and cooled

1 package spinach

1 medium onion, chopped

2 cloves garlic, pressed or minced

3 large bell peppers, halved and seeded

Salt and pepper

Olive oil

Queso fresco or other easy melting cheese (goat would be good too), sliced/crumbled

Place heavy skillet over medium heat, and lightly oil when hot.  Add sausage and brown.  Remove sausage and wipe most of grease out of pan.  Add chopped onion and saute until translucent.  Add spinach and garlic and cook until spinach is wilted.  Combine sausage/rice/spinach, season to taste with salt and pepper and spoon into bell peppers.  Bake at 350 degrees for ~30 minutes, top with cheese and return to oven until cheese is melted.  If you like it spicy you could also stuff a poblano pepper.  If you don't eat meat the veggie sausage would work as well.  You could use another grain, like quinoa if you want to feel superior.  Feel free to modify :)
