One Stick Pony


The simplicity of a meal on a stick.  Korea had corn dogs with tater tots embedded in the batter, and the chicken on a stick lady down the street with her spicy grilled chicken/green onion skewers.  Sure, I hate touching raw chicken but it gets easier from there....unless you forget to soak your bamboo skewers and they catch on fire.  Do yourself a favor and use chicken thighs; they don't dry out on the grill and the vegetables have time to cook.  I used a premade glaze, something I typically avoid.  The little medicine cup of pinot noir combined with the friendly sample ladies made it hard not to use the $2.00 off coupon for the featured sauce--Pineapple Coconut Mango Tequila Sauce.  It is really tasty, even though the first ingredient is sugar.  One package of chicken thighs, one half red onion, one red bell pepper and some pineapple chunks from the fruit bar fed the family.  You could add rice or just have some liquid bread (Blue Moon Wheat Ale).
