Summer is here to stay, and we need light, lower alcohol cocktails (since we will need to drink more of them). My good friend Colleen introduced me to Pimm's Cup when we were stationed together in Ft. Riley, Kansas, and I can never make them without thinking of her. There are a variety of recipes for this cocktail, but for me it isn't Pimms without cucumber. I like to make them by the pitcher and serve in tall glasses over ice. Here's my recipe:
8 oz. Pimm's No. 1
2 bottles Reed's extra ginger brew
Mix all in tall pitcher, muddling fruit slightly. Serve over ice, making sure that each glass gets a little fruit.
Note that photo quality declines when the talent is holding a drink instead of the camera...cheers Colleen, we know it's hotter where you are so will drink one for you!
