While I was suffering during my weekly long run (note the temperature of 83 and humidity of 75% at 9:30 a.m.), Sophie was diligently procuring this week's waffle recipe. Thank you Kerry at Bakergirl for our weekly inspiration!
1 1/2 cups all-purpose flour
3 tablespoons granulated sugar
1/2 cup cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3 large eggs, beaten
4 tablespoons butter, melted and slightly cooled
1 teaspoon vanilla extract
2 cups buttermilk
Preheat waffle maker according to manufacturer's instructions. In a medium bowl, combine flour, sugar, cocoa powder, baking powder, salt, and baking soda. Whisk to blend. In another bowl, combine eggs, butter, vanilla, and buttermilk. Whisk to blend well. Mix the egg mixture into the flour mixture until just incorporated. Stir in 1/2 cup chocolate chips, if using. Let the batter rest for 5 minutes. Cook til crispy!

If you aren't lucky enough to have family in Hawaii you can probably get this syrup on-line. Delicious on any type of pancake or waffle. Chocolate goes well with cherries too.
And I imagine the leftover waffles will be spectacular with some mint chocolate chip ice cream this evening.
