Happy Ending Salad

Determined not to have to put yet another batch of kale into my juicer after it had wilted into oblivion I searched food52.com for a good raw kale recipe.  I steeled myself for moans of disappointment from Sophie--kale and fish at the same dinner.  The horror, especially the night before her science bee.

 Strangely enough, Sophie was anxious to help prepare the kale, likely due to the use of a salad spinner.  She likes gadgets.  I modified this recipefrom Aldy on food52.

Massaged Kale Salad

1 bunch kale, destemmed, washed and dried

1 apple, cut into 1/2" dice

1/2 red onion, cut into 1/2" dice

1/2 cup toasted pepitas

mizithra cheese for shredding

1/4 cup olive oil

2 TBS apple cider vinegar

2 tsp kosher salt


Stack kale leaves, roll tightly and cut into ribbons.  Massage with 2 tbs. kosher salt until leaves soften...

Mix vinegar/olive oil in a lidded glass jar, shake to combine.  Toss with kale and remaining ingredients.  Grate cheese on top, and add a little freshly ground pepper.  Sophie loved it; I loved it.  It was good the next day--we tossed our leftovers with some quinoa and additional dressing.

 We made Dorie Greenspan's broth braised potatoes.  Petite potatoes simmered with herbs/lemon/chicken broth.  Truly excellent with absolutely no butter-how often can you say that about a potato?  

Pan seared ono with rogan josh--Sophie grudgingly enjoyed even the fish. We had the cucumber honeydew cayenne frozen yogurt for dessert.  A happy ending after all, except for this guy.....
