I can't believe I have been a midwife for 11 years and haven't made my own granola.
Combined with my own homemade yogurt that I started making this year (thanks Tipsy Baker!) it's the ultimate urban homesteading breakfast for me. Especially since the homeowner's association denied my request for a chicken coop (just kidding Mary). I overbaked slightly, but still delicious.
2 cups rye flakes
2 cups rolled oats
1 TBS cinnamon
1 cup pecan pieces
1 cup coconut chips/flakes
3/4 cup real maple syrup
1/2 cup oil
1 tsp kosher salt
Preheat oven to 350F. Stir above ingredients together in a large bowl, then spread on baking sheet in even layer. Bake 15 min and stir--repeat until you have the desired browning. Make sure to set that timer...by the time you smell it burning it's too late.
You could add dried fruit of your choice after it cools.
