I am sure that anybody with a community or church cookbook has a recipe for this breakfast charmer. I remember having these on special occasions as a kid. The best part is the super crispy bottom crust that has had maximum butter exposure. Simple to make for a crowd too. Sophie found the recipe at Penzey's, and it makes two 9" pancakes which was just enough for the three of us to share without fighting. The ruby red grapefruit in the background is to make Maddy jealous.
2 medium apples, peeled/cored and thinly sliced--toss with 2 TBS cinnamon sugar
3/4 cup flour
1/4 tsp vanilla
3/4 cup milk
1/2 tsp salt
4 TBS butter
Heat oven to 400F. Place two TBS butter in each 9" pie plate and place in oven to melt. Tilt pan so butter covers bottom evenly.
Put all remaining ingredients except apples in blender and blend. Place sliced apples on bottom of pie plate on top of your melted butter. Pour batter evenly into pie plates and sprinkle a little extra cinnamon sugar on top. Bake until puffed and golden ~20-25 minutes.
