Humble Pie

If you are a starving college student like Maddy, or just cheap like me, sourcing the freeze-dried corn for Momofuku Milk Bar's crack pie is a source of frustration.  Even if I was willing to pay $10 + for a bag of Just Corn it is difficult to find.  The recipe for crack pie that you can find online omits the corn powder, but I am a Milk bar purist and feel like the pie that warrants its own chapter in the cookbook deserves my best effort.

Enter "toasted corn snacks" from Whole Foods.  At <$5.00 for a tub it is a bargain and good for eating greedy handfuls while you are waiting for your pie to bake.  Something like a corn nut but less tooth-crackingly hard.

If you didn't drink the Kool-Aid at the Vitamix demonstration you can use a food processor to pulverize into a powder.  I store the powder in the fridge in a little glass jar.  You only need 1/4 cup for two pies. 

Our family dispatched the first pie in less than 24 hours.  We brought the second pie to a block party where people were oblivious to its charms.  Attracted by the shiny store bought chocolate cake, they ignored the crack pie in its plain brown wrapper.  Fools.
