Maddy and I had a girls day out last week which involved some unsuccessful shopping for a "vegan moto jacket" and the discovery of the Williams Sonoma in Chevy Chase. I found a jar of vadouvan spice blend there and promptly purchased it with this macaroni cheese dish from "Make the Bread, Buy the Butter" in mind.
Vadouvan is a blend of garlic, shallots, curry leaves, onion, coriander, cumin, fenugreek, turmeric, black pepper, cardamom, and cayenne pepper. I have never seen it anywhere and was resigned to having to order it from Kalustyan's. It elevates your macaroni and cheese without making it kid-unfriendly.
An 8 hour power outage after a brief but violent storm prevented me from cooking it immediately. We had some super salty soup at Potbelly's instead. Ian had "the Wreck" sandwich which was jealousy-inducing awesome. But I digress. Since the storm, the weather here has been sparkling clear without a trace of humidity. Perfect macaroni and cheese weather.
Sophie had seconds. I had a giant bowl after I got back from my running group, and wouldn't recommend eating it prior to any form of strenuous exercise. It is the only macaroni and cheese recipe I will ever use from this point on.
