If I hadn't cropped my face out of this first photo you would understand just how bad this jellyfish smelled. It was an angry sea that littered the beach with countless Portuguese Man O' War and prevented us from having a Christmas Day swim. It was unseasonably warm, even for Florida, and we couldn't have picked a better week to drive down to Pensacola to surprise my mom with a visit.
I cannot remember the last time we were all together, and I am hoping to prevent this from happening in the future. There was a lot of laughing over old photo albums, my mom's outstanding cooking, and plenty of nostalgia for coffee cups and decorations that pre-date even me.
I will leave you with this recipe for breakfast baked eggs from one of my mom's Officer's Wives Club cookbooks.
"Company Eggs" (because you don't want to waste Gruyere on just anybody....)
1/2 lb. Gruyere cheese, grated
4 TBS butter
1 cup heavy cream
1/2 tsp salt
1 1/2 tsp dried mustard
12 eggs, slightly beaten
Spread cheese in a buttered 13x9-inch baking dish. Dot with butter. Mix cream with seasonings and mustard. Pour half over cheese. Add eggs, and then the remaining half of cream mixture. Bake at 325 F for about 35 minutes or until eggs are set.
